They measure and manage temperature, pH, sugar content, etc., control yeast and microorganisms, manage sanitation, and perform sensory evaluation (tasting) to maintain quality. They also operate and maintain equipment, manage records, and comply with laws and regulations. With accumulated skills and experience, career paths to chief winemaker, etc., open up.
