The Oil Press Worker (Soy Sauce Production) is a job that produces koji from soybeans and wheat as raw materials, then after mixing and aging in fermentation tanks, presses out the soy sauce using hydraulic presses or centrifuges. The obtained soy sauce is filtered to remove foreign matter using filtration devices, and undergoes heat pasteurization to manage microorganisms. During operations, salt concentration, temperature, pH, etc., are measured to check product quality. Additionally, equipment inspection and cleaning, record management, and compliance with hygiene management standards (HACCP) are required.
