Description
Sake brewers are responsible for the entire process of sake production. First, they polish the raw rice, soak and steam it, then cultivate koji mold in the koji room. Next, they make shubo (moto), prepare moromi, and control the fermentation process under temperature and humidity management. Once fermentation is complete, they press the moromi, filter and pasteurize (hi-ire) the pressed sake, and store and bottle it. They maintain stable product quality through quality analysis and sensory inspections throughout all processes, and also include operation and maintenance of manufacturing equipment.

While the shortage of successors is becoming serious due to the aging population and declining birthrate, opportunities for technology inheritance and market development are expected due to the enhancement of value as a traditional industry and the expansion of overseas demand.
