Description
Nori tsukudani makers are specialists who mass-produce tsukudani using nori as the raw material. After selecting, washing, and desalting the raw materials, they boil and simmer in a seasoning liquid prepared with soy sauce, sugar, etc., while managing sugar content and pH to adjust flavor and texture. Then, after heat sterilization using filling machines and sterilization equipment, they perform packaging and shipping preparation. Important tasks also include factory hygiene management, production planning, raw material inventory management, equipment operation and maintenance, and quality inspection.
