The work is mainly concentrated in a few months of early summer, centered on manual labor such as underwater harvesting, harvesting using small boats, and removal of mud and debris. After harvesting, they cool and pack the product to maintain freshness and supply it to markets and processors. The work is greatly influenced by weather conditions and water level changes, requiring high physical strength and knowledge of the natural environment.

In recent years, demand for junsai has been stable due to growing health consciousness and interest in local ingredients. However, shortages of successors and aging are challenges. Mechanization progress is limited, and ensuring quality and branding for high added value will be key in the future.
