Description

Atsuage manufacturing workers are specialists who produce tofu from soybeans as raw material and process it into thick fried tofu. They wash and soak the soybeans, grind them, heat and filter the mixture, then add a coagulant (nigari) to solidify it and form it into tofu. After that, they cut it to the appropriate thickness, immerse it in high-temperature oil in a frying vat, fry it, remove excess oil, cool it, and turn it into a finished product.
